Healing Herbal Tea

Ingredients

  • 6 star anise
  • 15 fresh mint leaves
  • ¼ tsp Kashmiri saffron threads plus a few more garnishing
  • ⅓ cup lemongrass stems and leaves, chopped coarsely
  • 1 tsp ginger, grated
  • 2 pinches cinnamon powder
  • ½ lemon, sliced thinly
  • 1 tsp sweetener of your choice (optional)

Method

  1. Place the saffron in a small bowl. Pour ¼ cup boiling water over it. Cover with a lid and keep aside.
  2. Boil 3 cups of water in a saucepan.
  3. Once the water starts to boil, add the star anise and lemon grass.
  4. Let it simmer for 5  minutes, then add ginger and 10 mint leaves.
  5. After 2 minutes, add cinnamon powder.
  6. Cover with a lid and simmer till the tea mix reduces to almost half.
  7. Uncover the pan and add the saffron along with the water.
  8. Simmer for half a  minute. Add sweetener if desired.
  9. Strain into 2 teacups. Garnish with the remaining mint leaves, lemon slices and a few saffron strands.
  10. Enjoy your health brew while it is hot!
